This is my first attempt at strawberry pie. I found some local strawberries which was offered at less than RM9...I thought it was cheap. They were not sweet so I thought better turn them into pie. The crust recipe is fabulously crispe. The cream filling was ok. I am still research for a better filling. This filling taste better after over night. It will also hold its shape pretty well.
100g flour
50g butter
a pinch of salt
1 tbsp of cold water
Cut the butter into flour with salt until it resembles crumbs. Sprinkle the cold water and mix it in until it form into round dough. Press it together but not too much. Put into refridgerator for 30 mins. Roll it out and put into 8 inch pie pan. Bake it blind or with your favourite filling.
The Vanilla Cream Filling
4 cups milk
2 tbsp butter
2 egg
1 cup sugar
1/2 cup cornstarch
1/2 tsp salt
1 tsp vanille essence
In a sauce pan mx all the ingredients together on a very low fire. You MUST keep stirring constantly until the mixture becomes thick.
